Onigiri - Rice Triangles

The simplest Japanese snack: balls or triangles of rice with a filling, wrapped in nori. Perfect for a picnic under the cherry blossoms.

Ingredients

  • 2 cups sushi rice
  • 2.5 cups water
  • 1 teaspoon salt
  • Nori sheets
  • Filling: tuna with mayo / salmon / umeboshi (pickled plum)

Method

  1. Cook the rice and let it cool slightly (it should be warm, not hot).
  2. Moisten your hands with salted water so the rice doesn't stick.
  3. Shape a portion of rice in your hand, make a hollow in the centre and add the filling.
  4. Form a triangle, pressing from three sides.
  5. Wrap with a strip of nori and serve.
💡 Paweł’s tip: Wet hands plus a pinch of salt are the key - that way the onigiri holds its shape and has flavour.
