Ramen Shoyu (Simplified)

A homemade, quicker version of the iconic soy-sauce-based ramen. No hours-long broth required.

Ingredients

  • Ramen noodles (or egg noodles)
  • 1 l good-quality chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger and garlic
  • Toppings: soft-boiled egg, spring onion, sweetcorn, nori, cooked meat

Method

  1. Heat the broth with the ginger and garlic.
  2. Add the soy sauce and sesame oil, and season to taste.
  3. Cook the noodles separately, according to the package, and drain.
  4. Transfer the noodles to a bowl and pour the hot broth over them.
  5. Arrange the toppings: a halved egg, spring onion, nori, meat.
💡 Paweł’s tip: The egg: boil for 6.5 minutes from boiling point, then plunge into cold water - the yolk stays creamy (ajitama).
