Okonomiyaki - Osaka Savoury Pancake
A filling, savoury "whatever you like" pancake - an icon of Osaka cuisine. The name means "grill what you like".
Ingredients
- 1 cup flour
- 3/4 cup dashi broth (or water)
- 2 eggs
- 1/4 head of cabbage, finely shredded
- Slices of bacon
- Okonomiyaki sauce, Japanese mayonnaise, bonito flakes, nori
Method
- Mix the flour, dashi and eggs into a smooth batter.
- Stir in the shredded cabbage.
- Pour a portion onto a hot pan and lay the bacon on top.
- Fry for about 4-5 minutes, flip and fry the other side.
- Brush with okonomiyaki sauce and mayonnaise, and sprinkle with bonito flakes and nori.
💡 Paweł’s tip: The more cabbage the better - it's what makes it light. Don't press the pancake down with the spatula, so it stays fluffy.
