Mochi - Rice Cakes

Soft, stretchy little rice balls - a Japanese dessert perfect with tea. The microwave version is ridiculously easy.

Ingredients

  • 100 g glutinous rice flour (mochiko/shiratamako)
  • 200 ml water
  • 2 tablespoons sugar
  • Potato starch for dusting
  • Filling: red bean paste (anko) or strawberry

Method

  1. Mix the rice flour, sugar and water into a smooth batter.
  2. Cover and microwave for about 1 min, stir, then another 1 min - the mixture will thicken and turn elastic.
  3. Turn it out onto a surface dusted with potato starch and let it cool enough to handle.
  4. Divide into portions, flatten each one, place the filling in the centre and pinch into a ball.
  5. Dust lightly with starch so they don't stick together.
💡 Paweł’s tip: Potato starch on your hands and work surface is a must - without it mochi sticks to everything.
